Farine Pudding

Ingredients

4 oz farine
2 eggs, separated
10 oz sugar
1 pt milk
2 bay leaves
jam for spreading
 

Instructions

Beat egg yolks with half the sugar. Heat milk with the bay leaves. Pour on to beaten egg. Spread some jam on the bottom of a greased ovenproof dish. Pile the soaked farine on top of the jam. Strain milk mixture over farine. Allow to soak for a while. Bake in a moderate oven, 350ºF, for about 20-25 minutes until golden brown. Whisk the egg whites until stiff. Fold in the remaining 5 oz sugar. Spoon over the pudding. Return to oven for about 7-8 minutes to brown top. Serve hot. Serves 6
