Jalebi
Ingredients
2 cups flour
2 tsps rice flour
1 tbsp yeast
A few drops yellow coloring
Oil or ghee to fry
Water to mix
Syrup:
4 cups sugar (White or brown & white)
4 cups water
Rose or kewra essence (optional)
Instructions
Dissolve 1 teaspoon sugar in a little warm water.
Add yeast and leave for 10 minutes.
Add flour and enough water to make a thick paste.
Set aside for 45-60 minutes.
Make syrup with sugar and water.
Add coloring and essence.
Heat oil or ghee in a wide frying pan.
Drop mixture through a funnel, a plastic bottle with a small hole or a cloth with a small button-hole made in the center.
Form small concentric circles with mixture and fry till golden brown.
Drop in syrup.
When soaked, lift with tongs and drain extra syrup
