Bacon and Fish Rolls
Ingredients
8 back bacon rashers 8 small fish fillets (banga, cutter or mullet) Lemon juice Sprigs of parsley to garnish
Instructions
Remove bacon rind and flatten the rashers with the back of a knife on a board. Put a fish fillet on each rasher, add salt and pepper and a squeeze of lemon juice. Roll up and secure with a toothpick. Place on a greased pan and bake in a moderate oven, 350 degrees Fahrenheit, for 20-30 minutes. Serve with egg sauce. Garnish with parsley. Serves 8
