Island Chicken With Fruit

Ingredients

1/4 cup onions, minced
1 cup NESTLE Cream
1 tbsp. cooking oil
1 tsp. salt
2 tsps. ginger, grated
1/4 tsp. cumin
1/4 tsp. ground turmeric
1/4 tsp. ground cinnamon
1/2 kg. chicken fillet
1-1/2 cups honeydew melon, cut into 1-1/2" chunks
1-1/2 cups ripe mango, cut into 1-1/2" chunks
1/2 cup pineapple chunks
1 tbsp. lemon juice
1/4 tsp. pepper

Instructions

1. Combine the first 8 ingredients, add chicken to coat, marinate for at least 2 hours. 2. Pan-fry chicken until lightly brown. Remove from pan and set aside. 3. Stir in remaining marinade in the same pan for sauce. Heat through. 4. Slice chicken into 5 pieces. 5. Gently toss fruits with lime juice or pepper. 6. To serve, arrange fruit mixture and chicken side by side on the plate. 7. Pour sauce over chicken.
