Roasted Banana Ice Cream

Ingredients

ROASTED BANANA ICE CREAM 

MAKES 1 QUART
 
2 Tablespoons vegetable oil
4 ripe bananas, unpeeled
6 egg yolks
1 1/3 cups sugar
2 cups milk
2 cups heavy cream
2 Tablespoons dark rum

Instructions

1. -- Preheat oven to 350° F. 2. -- Lightly oil bananas and place on a baking sheet. Bake for 10 –15, or until they are dark and soft. 3.-- Remove the bananas from the oven and peel. Puree in a food processor and set aside. 4. -- In a large stainless steel bowl, whisk together the egg yolks and sugar until light and foamy. 5. -- In a large saucepan set over medium heat, combine the milk and cream. Bring to a boil. 6. -- Remove from heat and slowly pour into the yolk mixture, whisking rapidly. Add the banana puree and rum. 7. -- Strain and cool. Freeze according to the manufacturer’s instructions.
