Guyana Rice Treat

Ingredients

1 lb prawns
2 tbsp oil
1 bundle bora beans, cut in ¼ inch lengths
2 tomatoes
4 oz cabbage, shredded
2 onions, chopped
piece of pumpkin, diced
1 green pepper, chopped
1 pt cooked rice
6 slices pineapple, diced
2 tbsp chopped eshalot
2 tbsp chopped celery
Pineapple shell for serving
parsley to garnish

Instructions

Sauté prawns in oil for about 3 minutes, stirring occasionally. Add vegetables and continue cooking for 5 minutes, stirring occasionally. Add rice, salt and pepper, diced pineapple, eshalot and celery. Mix well together. Allow t become quite hot. Spoon lightly into pineapple shell. Garnish with parsley. Serve hot. Serves 8-10
