Grilled Prawns


25 raw king prawns
3 tsp vegetable oil
6 tbsp ginger wine or dry sherry
1 tsp lemon juice
lemon slices to garnish


1. Remove the heads from the prawns, peel but leave tail on. 2. Cut along the back, taking care not to cut all the way through. Remove the vein. 3. Open out the prawns. Push a skewer or toothpick through to hold each prawn open. Mix oil, soy sauce, wine and lemon juice together and brush over prawns. 4. Cook under a hot grill blasting constantly with the soy mixture until the prawns are cooked and well glazed, about 5 minutes. Prawns may also be fried in an oiled frying pan. 5. Serve whole or cut into pieces. Garnish with lemon slices. Serves 25
